Well, it’s not TECHNICALLY pasta, haha… but here’s a new recipe I loved making recently and therefore wanted to share it with you. I still can’t get over how easy this was to make and how delicious it turned out 😋 Please give it a try and let me know what you think! Calories = approx. 550 per person.

Ingredients (for 2 people);
- 500g gnocchi
- Olive oil
- Salt + pepper
- 1 small red onion, finely diced
- 1/2 a red pepper, finely diced
- 100g chorizo, finely sliced
- 1 diced chicken breast
- 1 tbsp paprika
- 200g passata or tinned tomatoes
- 2 tbsp hot sauce (we used @yorkshirepreserves Habanero Chilli Sauce)/ or chipotle paste
- 1 tbsp honey
- 60g grated cheese (we used a cheddar & mozzarella mix)
- 2 spring onions, thinly sliced
Method (Approx 30 mins in total);
- Heat the fryer to 200C.
- Add the gnocchi to the air fryer basket with a drizzle of olive oil, season with salt, and mix. Add the onion, pepper, chicken, and paprika into the basket and stir to coat.
- Cook for 20 minutes, shaking every so often.
- Combine the passata, hot sauce, salt, and pepper in a bowl.
- Once gnocchi is cooked, stir the sauce into the air fryer along with 1/3 of the cheese. Mix it together, then top with the remaining cheese and spring onion, and cook for 5 more minutes until melted and crispy.

The gnocchi was slightly crisp, just how it should be. And the cheese was gooey with a crispiness to it also. So yeah, as long as you have an air fryer, there’s not a lot of washing up to this one at all! And that’s what we like 👍🏼 Please do give this a try and let me know what you think.
