Chicken & Creamed Kale

This meal is a really tasty and indulgent one that I came up with whilst very vaguely trying to follow a recipe on an American website, tweaking some ingredients and measurements to make a banging dish! A one pan wonder, this recipe is packed with protein and lots of green vegetables, so it’s healthy as well as comforting. We decided to have this dish with warm baked bread and garlic butter, but you can have this with rice or pasta too. Approx. calories per portion = 550.

Ingredients (for 2 people);

  • 350g chicken breast, cut into large slices
  • 1 red onion, diced
  • 60g olives, halved
  • 100g broad beans
  • 50g grated Parmesan/Gran Pedano
  • 160g kale
  • 2 garlic cloves, crushed
  • 160ml creme fraiche
  • 2 tsp wholegrain mustard
  • 1 tsp thyme
  • 1/4 tsp ground nutmeg
  • Olive oil, salt + pepper

Method (Approx. 40-43 mins including prep);

  1. Season the chicken slices with salt and pepper. Heat a shallow, large frying pan on a medium-high heat with a good lashing of olive oil. Once the oil is hot, add the chicken to the pan and let it fry undisturbed for about 4-5 minutes each side until browned, it does not need to be cooked all the way through at this point. Remove from the pan and set aside.
  2. Reduce the heat on the hob to a medium heat. Add the onion to the pan and let it cook for 2-3 minutes until it begins to soften. Have some water or chicken stock to one side to add to the pan in a couple of tablespoons at a time if the onions begin to brown to quickly. Add the garlic and cook for a further minute.
  3. Add half of the kale and cook until it wilts down, around 3-4 minutes, then stir the rest of the kale in for the same amount of time.
  4. Stir in the creme fraiche, Parmesan, mustard, thyme, nutmeg and seasoning and turn the heat to high to bring the creamed kale to a simmer whilst stirring.
  5. Reduce the heat back to medium and nestle in the sliced chicken. Add the olives, and cook uncovered at a low simmer for about 15 minutes. Cut into one of the pieces of chicken to ensure it is now cooked all the way through.
  6. Serve between 2 bowls and add a further sprinkling of Parmesan and the accompaniment of your choice!
