Welcome to another of my classic recipes where I just put lots of leftover ingredients together to come out with something mouth-watering, even if I do say so myself! This dish is versatile to add/remove ingredients as you wish, but is a great way of using up fridge bits and I would happily buy the ingredients in again just to make this recipe as I enjoyed it that much. A tasty lunch or dinner – let me know what you think. A bright, well-balanced meal perfect for any time of the year.

Ingredients (for 2 people);
- 100g smoked bacon lardons
- 150g Polish / Smoked sausage, sliced
- 300g (2-3 small) sweet potatoes, diced into chunks
- 1 red onion, chopped
- 100g Tenderstem broccoli, cut in half/three more manageable pieces.
- 1/2 tbsp dried Marjoram (found with the herbs in most large supermarkets)
- 1 tsp chilli flakes
- 2 garlic cloves, chopped
- 1 tsp smoked paprika
- 200g passata/chopped tomatoes
- Pickled red cabbage to garnish (optional)
Method (Approx. 20 minutes altogether);
- Place the sweet potato chunks into a microwavable bowl with a tablespoon of water and microwave for 6-8 minutes until tender. (Check after 6 minutes so they don’t come out too soft).
- Using a large frying pan, heat up some olive oil on a medium heat and add in the chopped red onion.
- Once the onion is softened, add the garlic into the pan and fry for a further minute.
- Add the bacon lardons and the sausage to the pan until the bacon is all cooked through and beginning to crisp.
- Add the passata, marjoram, chilli flakes, smoked paprika and broccoli and cook the mixture for around 5 mins for the sauce to thicken and the broccoli to soften slightly, adding water if needed.
- Once the sauce has thickened and the broccoli is at a nice texture, add in the sweet potato and give everything a good mix up until warmed through.
- Serve with garnish of pickled red cabbage if you like.
