Greek Chicken Tray Bake

Bringing together some of the refreshing tastes that make you think of the Mediterranean, this Greek Chicken Tray Bake goes down a treat – it’s so vibrant as well as satisfyingly filling. You may want to wait until we have cooler weather for this one as the oven does a lot of the work, BUT there’ll hardly be any washing up to do AND it’s absolutely worth it for the delicious result. Please read the method ahead as there is a little prep work involved such as marinating the chicken for a little while.

Ingredients (for 2 people);

  • 250-300g chicken breast
  • 50g fat free Greek yogurt
  • 3 tbsp oregano
  • 1 tbsp easy/grated garlic
  • 3 tbsp of lemon juice
  • 4 small potatoes
  • Garlic granules
  • 1 pepper
  • 1 red onion
  • 1 tbsp Jarred sweet drop peppers (optional)
  • 1 tbsp pickled red cabbage
  • 100g cherry tomatoes
  • 70g feta

Method (Approx. 1 hour including prep);

  1. Slice the chicken into thin slices and marinate this in 50g of fat free Greek yogurt, 2 tbsp of oregano, 1 tbsp of easy garlic, 2 tbsp of lemon juice and some salt & pepper. Let that marinate for at least half an hour in a bowl in the fridge.
  2. Pre-heat your oven to 180 degrees. Chop the 4 small potatoes into quarters add to an oven tray, spray with frylight or drizzle with olive oil, season in the remaining oregano, a sprinkle of garlic granules and salt & pepper. Pop in the oven for 25 minutes.
  3. Chop the pepper into large chunks and the red onion into quarters. Take the oven tray out and add the peppers, onions and marinated chicken from the fridge, on top of the potatoes.
    Pop back in the oven for a further 20 minutes.
  4. Take the oven tray out and place on top some sweet drop peppers, the pickled red cabbage and cherry tomatoes . Pop back in the oven for another 15 minutes.
  5. Once everything is cooked, just spoon into two bowls making sure you have a mixture of everything in each bowl and crumble the feta cheese on top and drizzle over the remaining lemon juice.
  6. Enjoy! Nom nom.

This is a real comfort food meal, perfectly versatile and easy to cook for dinner parties/large groups too!
